A wholesome spicy lentil soup, perfect on a winter night.

I used whole brown lentils for this recipe which took about four hours to completely soften but you can replace with any lentil you like and save on some cooking time. This is spicy but not too spicy. You can adjust the spicy level to your liking as well. If your not a fan of kale try replacing it with baby spinach or leaving it out. However I’m not usually a fan of kale but in this recipe it tastes great.

Spicy Lentil Soup

Ingredients (serves 6)

  • 1 Jalapeno pepper sliced
  • 1 Bunch of kale, stalks removed and finley chopped
  • 200g Spec. Skin removed and finely chopped
  • 2 Cloves of garlic, finley chopped
  • 1 Tin of tomatoes
  • 1 Cup of chicken stock
  • 2 Cans of coconut milk
  • 1 Cup of dried lentils of your choosing.
  • 1 Hand full of finely sliced green beans
  • 1 Celery stalk finely chopped
  • 2 Tbsp curry powder
  • 1 Pinch of cayenne pepper
  • 1 Tbsp garam masala
  • 1/2 Cup greek yoghurt
  • 1/2 Lemon squeezed
  • 2 Tbsp butter
  • Salt and pepper to taste

Method

  1. In a large pot add your Kale, beans, celery, spec, Jalapeno, garlic, lentils and curry powder, cook until soft.
  2. Add in your stock, tomatoes, tomato paste, coconut milk, cayenne pepper and 1/2 can of water (use your coconut milk tins). Cook until lentils are soft.
  3. Next in a small bowl mix the yoghurt, lemon and garam masala together then turn the heat off the pot and add your yoghurt mix in along with butter.
  4. Season to taste with salt and pepper and add some cream on top of desired.

  • Made this recipe last night and it was a big hit with the family. So easy to make too.

  • I do love to find and to collect vegetarian recipes and in particular soups for vegetarian friends. Soups are easy to make for Winter and when paired up with my fresh homemade bread make for an easy and delicious weekend meal. Soup is easy to serve and fills up hungry tummies.

  • Ooh this looks really healthy and yummy. I don’t usually use a lot of lentils in my cooking but I’m super keen to try. My kids can be a bit funny with anything “spicy” so im not sure how they’ll go with it but even if it’s not something they like it just means more for me!

  • Can’t wait to try. My 14yr old daughter has decided she wants to be a vegetarian…. She loves lentils, so any ideas would be so helpful
    Thank you

  • I love to eat lentils because they are so incredibly good for my health. I love the taste of lentils and they are full of flavour in so many recipes. Spicy lentil soups are always so delicious and also very filling for hungry tummies. Soup that is terrific to eat with homemade crusty bread.

  • I came back to write this recipe down. I think my family will love it.

  • This soup looks delicious and sounds so spicy – perfect for the cooler months. I also like that you have added the natural greek yoghurt to make it creamier and dampen down the spices a bit. It is also good for gut health, in fact this soup would be excellent for gut health and to strengthen our immune system. Thanks so much for sharing.

  • I can not do spicy myself, but looking through this recipe, it sounds equally delicious without the spice ingredients.
But i cannot work out what Spec is? Could also put fresh, need to be eaten, tomatoes in this.

Served with warm crusty bread on a cold and wet evening! I can feel the inner warmth already!!

  • My hubby would love this, but I reckon my son would rebel. Having the jalapeno in there might just make it too spicy. I do love the incorporation of all the veggies though and nothing is more filling or hearty as lentils in your soup on a cold winter’s night. Would be perfect with bread too.

  • This sounds so flavoursome and filling. I’ve never really liked Kale but I am up to trying it this way, in a soup. I don’t know what spec is but will have a google later. I love to try these new things with so many varying ingredients. I feel like a chef that knows what they’re doing lol.

  • I often add lentils to soups, stews, lasagne, spag bol etc.Yet I’ve never had a lentil soup. I’ll definitely be trying this recipe, although I’m not too keen on kale

  • I’ve never been the biggest fan of Lentil soup after having it served up regularly as a child. The addition of Kale and coconut milk though is something I haven’t tried so maybe it’s time to give it a try again and introduce it to our menu soon. I love coconut milk πŸ₯›

  • Not the biggest fan of lentil soup, with the taste and all the different lentils added in. Just textually too much happening that is a bit too much for my liking. Although i do appreciate how easy and simple the steps are to follow to make this! Looks very wholesome and nice.

  • This sounds so yummy! My husband wasn’t very exploratory with food when we first got together but now he is open to anything and has been requesting a veg meal once a week, as it makes him feel better, I think I may add this to next weeks menu. Loving the use of Greek yoghurt in this, it just elevates these types of dishes so well
