If it’s been a while since you’ve enjoyed the goodness of a papaya – it’s time you popped one in your trolley and tried this delicious Papaya Pancakes recipe!

According to the Papaya Australia Nutrition Review, these delectable fruits contain a unique bundle of nutrients that benefit your whole body. Things like helping keep your immune system fit, boosting your mood, creating glowing skin, reducing tiredness, improving gut health, nervous system and muscle function. Amazing!

Ingredients (makes 8 )

  • 1 papaya
  • 200g self raising flour
  • 2 tbsp caster sugar
  • 1 tsp baking powder
  • 1 egg, lightly whisked
  • 250 ml milk of your choice
  • 20g butter, melted

Method

  1. Cut papaya in half lengthwise, scoop out seeds. Scoop out flesh from one half of the papaya and blend until smooth, set aside. Cut the remaining half papaya into cubes, removing the skin and set aside.
  2. In a large bowl, mix flour, caster sugar and baking powder.
  3. In a jug, mix egg, milk, butter and papaya puree and pour into flour mixture, whisk until smooth.
  4. Heat a large non-stick frying pan over medium-low heat. Spray with oil. Pour 80ml (1/3 cup) of the batter into the pan. Cook for 2 minutes or until bubbles appear on the surface. Turn and cook for a further 1-2 minutes or until golden. Repeat with the remaining batter to make 8 pancakes.
  5. Serve pancakes stacked with yoghurt and papaya pieces, topped with papaya pieces, blueberries, honey, pistachio nuts and mint

  • Wow this pancake recipe sounds really delicious. I never considered adding papaya pieces as it is not a fruit that i have really eaten much of. i wonder if you could replace the egg with yoghurt like you can in cakes for anyone who can’t eat egg. I might have to give it a try, it sounds easy to make.


  • Just wondering if dried papaya has the same health benefits as fresh papaya because I love the dried variety and not so keen on the fresh.


  • I’m really into Papaya at the moment. Mostly for their parasite destroying capabilities. This is a great way to get it into you. I try to eat the seeds whole though, apparently they work best that way and also they don’t really taste very good. This recipe is definitely worth a try.


  • I have tried papaya on it’s own and don’t particularly like the taste and especially am put off my the smell. I am willing to give it another go in case my opinion of papaya has changed because it does have a lot of health benefits. I love this recipe idea and would give it a go.


  • I have a love hate relationship with papaya. I dont usually eat this fruit here as i find the texture a tad too mushy for my liking. But when im overseas on holiday, and i see this at the breakfast buffet, for some reason, it tastes soo good! Papaya in pancakes is definitely a new one for me


  • See, even though I don’t particularly like papaya, I reckon this would be a way that I could potentially eat it as it is pureed and then put into the pancake mix. It actually sounds like a beautiful recipe and looks really lovely to eat. It would be definitely one to try!

  • Well I love pancakes and so do our whole family but we have never had them with papaya. It’s not the easiest of fruits to find in our region. Unfortunately we no longer have a fruit and veg store near us (closest would be 50 minutes away) so we can only purchase fruit and veg from Woolworths or Coles or our little farmers market but they don’t seem to stock papaya as it is not grown locally. I would like to give this a crack though, I just have to hunt down some papaya πŸ™‚

  • This is such an interesting recipe but totally makes sense when you consider how banana is used in a similar manner for pancakes and other baked goods. I unfortunately cannot seem to get my tastebuds around pawpaw, which is unfortunate as it contains so much fibre and healthy nutrients for the body.


  • I don’t know why, but I’ve never been able to eat papaya! It tastes awful and I’m a fruit lover!!! And makes my mouth feel fluffy. But I would happily swap papaya in this recipe with pretty much any other fruit. Mango, peach, nectarine, strawberries, etc. Pancakes are delicious after all.
