This yummy, smooth winter soup is perfect with crusty bread.

My kids love this soup, but change out the ingredients to your liking. Pumpkin doesn’t need to be roasted, if you’re lacking time but it does add a lovely rich flavour to the soup.

I always use real chicken stock rather than the powdered version as it adds so much more flavour.

Add in some chilly flakes if you want to add a bit of spice.

Cheesy Veg Soup


Ingredients (serves 8)

  • 1 Bag of frozen mixed veg (beans, cauliflower, brocolli, carrots)
  • 1/2 Med size butternut pumpkin chopped in 2cm chunks
  • 1 tbsp Garlic chopped
  • 2 tbsp Curry powder
  • 1 Ltr chicken stock
  • 1 Cup grated tasty cheese
  • 3/4 Cup cream
  • 1 Potato pilled and chopped in 2cm chunks
  • 2 tbsp Green split peas
  • 2 tbsp Red lentils
  • 2 tbsp Brown lentils
  • Salt and pepper to taste

Method

  1. Roast pumpkin in the oven with olive oil and salt and pepper untill lovely and soft
  2. Add pumpkin to a large pot and add all remaining ingredients appart from the cream and cheese, cook on a low heat, covered untill nice and soft. This may take 30-40mins as the lentals will take the longest to soften.
  3. Blend with stick blender then add in cheese and cream and salt and pepper if needed.

  • It won’t be long before we are experiencing cooler weather and that’s when I love pulling out the saucepan and making soups – all kinds of soups. I prefer creamier soups such as this one but my daughter prefers minestrones and my husband enjoys Thai soups. All very healthy and easy to make.


  • Seeing all these comfort foods like soup recipes whilst our family is run down with a cold just hits differently. When you don’t have much of an appetite but want something that will nourish you, this seems like a great recipe to make! I like all the ingredients in this too


  • This recipe looks great! There is certainly a lot of fibre in there, so it’s sure to be really filling. I don’t like that it includes frozen veggies though, I would much rather use fresh any day. The only frozen veg I ever use is peas and beans for convenience. But it does include plenty of fresh too.


  • This one sound delicious and very filling with the cheese & lentils. I’ve printed this one out ready to give it a try. the weather has been all over the place of late, so even though it is summer I’m sure we’ll have a cooler night soon and I’ll be right onto this one.


  • Sometimes all you need is a soup, something about it that makes it so comforting on a cold day or when you’re feeling under the weather. I do like the look of this recipe. It’s simple enough to make at home and would go great with some crusty bread on the side!


  • This sounds really delicious but it does have an awful lot of ingredients. I’m looking forward to winter to make more soups and I will keep this one in mind for then. In the summer in QLD it’s just way too hot to make soup. But this looks really good and cheesy.

  • Although this soup doesn’t appeal to me, I am a soup lover and have learned about the benefits of roasting vegetables before souping them! Especially pumpkin, garlic and cauliflower. Yuuuum. I’ve never thought to put frozen vegetables in a soup?! Is this simply adding hidden benefits? Anyway 39 degrees here timidity, so still salad season, but looking forward to soups again soon!


  • Pumpkin, Lentils and curry go together like magic! This soup sounds delish! My pumpkin vine is going off at the moment so I will have a bounty of fruit soon so this recipe will be added to my “use all the pumpkin you grew” recipe list. I wonder fi you could sub the cream for greek yoghurt ?


  • This looks absolutely delicious!! Really, with just a few simple ingredients and a smidge of time it doesn’t take much to create delicious meals for the family. I honestly can get a little lazy and lack inspiration when it comes to dinner time, so thank you for the inspo. So easy to make, affordable and a great one to make a huge batch to freeze for later enjoyment.
