If you find yourself (or the kids!) running out the door every morning with a rumbling belly, whip up a batch of these Healthy Breakfast Cookies for an easy and healthy grab-and-go breakfast.

From the creative kitchen of Arman Liew (better known as The Big Man’s World) comes these utterly delectable breakfast treats that are super easy to make, and adapt into 10 different flavours!

Ingredients (makes 12 Cookies )

  • 2 cups rolled oats
  • 1/4 cup protein powder (optional)
  • 1 and 1/4 cup mashed banana
  • 1/2 cup peanut butter
  • 2 tablespoons maple syrup

Method

  1. Preheat the oven to 180C. Line a large baking sheet with baking paper.
  2. Add oats, protein powder, banana, peanut butter, and maple syrup into a bowl and mix until a thick dough remains. Fold through your favourite mix-ins (see notes below).
  3. Scoop out portions of the dough and place them on the lined sheet. Use a knife to shape the dough into large, cookie shapes.
  4. Bake for 10-12 minutes, or until the edges are golden brown.
  5. Remove the cookies from the oven and let them cool completely.

Want to mix it up? Here are the different variations to up your breakfast cookie game:

  1. Cinnamon roll: Add 1/2 teaspoon cinnamon and 1 tablespoon of brown sugar. Drizzle the baked cookies with a simple glaze made of cream cheese, milk, powdered sugar and vanilla extract.
  2. Oatmeal raisin: Fold through 1/2 cup of raisins.
  3. Biscoff: Swap out half the peanut butter (or nut/seed butter of choice) with smooth Biscoff or cookie butter spread.
  4. Caramilk: Drizzle the cookies with melted Caramilk chocolate and/or Caramilk baking chips.
  5. White chocolate and raspberry: Add 1/2 cup of fresh or frozen raspberries and 1/4 cup of white chocolate chips.
  6. Strawberry: Fold through 1/2 cup of strawberries.
  7. Double chocolate:  Add 1/2 cup of cocoa powder and fold through 1/4 cup of chocolate chips.
  8. Chocolate peanut butter: Add 1/2 cup of cocoa powder and drizzle melted peanut butter over the freshly baked cookies.
  9. Nutella: Replace the nut/seed butter with homemade Nutella.
  10. Monster: Fold through 1/2 cup of M&M’s or candy buttons.

  • These sound so yummy and simple. I love that the ingredients aren’y overly processed either. The cinnamon roll version sounds delish! Cinnamon and cream cheese is like a match made in heaven and I can justify it by saying the cream cheese is adding some extra calcium and protein to the mix haha


  • I love this recipe and can’t wait to try it. All very straightforward with ingredients that are healthy and filling. My husband is always looking for biscuits and I would feel better if he were eating these biscuits instead of the shop bought ones. Thanks so much for sharing this recipe.


  • I’m going to send this one to my daughter to try for our grandsons. I’ll try it too. Even the allergies are covered in these and they sound healthy and filling. I’m always looking for something to mix up our breakfast and energy snacks now that we are exercising daily.


  • Love how simple this recipe is with minimal ingredients. I probably wouldnt add the added protein to begin with as often it can alter the taste. I can see this being a fun recipe to make with the kids on the weekend! They would absolutely love adding their own little toppings


  • What an amazing idea! I have never heard of breakfast cookies (other than those you can buy in the supermarket). These look so great and would be fantastic to eat on the go. I may try making some of these for my next hike as with the rolled oats base, they should travel pretty well.


  • These sound fantastic for my teenage sons. They love cookies but are always trying to be healthy and as they like to say ‘bulk’. I love that it’s only 4 ingredients and you can make different variations out of the mix. These would be great for my little ones too but without the protein powder.


  • Healthy without most of the suggested add ons! I like the other comment about adding walnuts. Macadamias would be amazing as well. The dried fruits also a great idea. Going berries appeal. For those looking a sweet idea, Milo or yoghurt drops would also by yummy. Perfect for the busy mornings or lunch box snacks.


  • I had to do a double take on this headline. I saw chocolate and m & ms but read breakfast cookies. I’m shocked to see such yumminess as breakfast


  • This look so good and how creative, my husband regally rushes in the morning and heads to the bakery on the way to work for a sausage roll. He has been complaining how he feels gross after it so maybe something like this with the protein powder added might be a better alternative for him on those rushed mornings. Thanks for sharing. Some chopped walnuts added would be great too for some omegas


  • Well these look delicious!! I would like to try them and add dehydrated oranges or cranberries – I think the chewiness and fruit would be a perfect addition. I know my kids would go straight for the chocolate toppings. Even thinly sliced banana chips would be super yummy with a drizzle of honey.
