The internet has developed a healthy obsession with this two-ingredient cottage cheese flatbread, and it’s not hard to see why.

It’s an easy peasy gluten-free, high protein, low-calorie bread alternative, and you probably already have the ingredients in your fridge.

Cottage cheese flatbread is being hailed as guilt-free bread, packing 25 grams of protein per serving. And it can be jazzed up with whatever herbs and spices you and your family love.

All you need to create this wonderous delight is:

Cottage Cheese Flatbread Recipe

  • 1 cup of cottage cheese
  • 2 eggs

That’s it! Just add both to a food processor and whizz it up. You can add any herbs you like at this point (garlic and onion powder are great, as well as Italian seasoning).

Once blended, pour the mixture onto a small baking pan that’s been lined with baking paper. Pop it in the oven at 180°C for 40 minutes and that’s it. You can use it as dipping bread, as a wrap for a sandwich with your favourite fillings. Amazing.

Food blogger Mac shared a video on how to make the flatbread, and she says while initially the thought of it ‘grossed her out’ once she tried it she says it blew her mind!

Will you be giving this a go, or have you already tried it? Let us know in the comments below.

  • I like it, it’s a very thin base but tastes really nice.

  • I have made two ingredient naan bread, but I haven’t tried this flat bread. It looks great and I would be keen to see if it works as a pizza base.

  • Ive never really been a huge fan of cottage cheese. I just don’t love the taste but the flat bread does look super simple to make and maybe it tastes different when it’s cooked? Or at least if you add some herbs etc. I might have to give this a try 🙂

  • I grew up on cottage cheese as a child, it was one of my favourite foods but i must admit that as an adult it hasn’t been something that i would buy at the shops. I will have to get some next time i am at the shops as it does taste good on crackers, breads etc and is an alternative for standard cheese.

  • This looks incredibly easy to make. I shall have to give it a go, as I’m definitely looking for lower carb options.

  • It’s kinda more of an omelette then a flat bread I think. Greek yoghurt and flour makes yummy flat bread

  • Cottage cheese is so underrated! As a teen I was overweigh and when I moved out of home and started cooking for myself post high school I started eating a lot of cottage cheese, on toasts, in omelettes as a side with carrots. The added protein and how full it made me feel did wonders for me

  • This is an amazing recipe and I’m very keen to try it out. Sounds very healthy for the kids and I think that I’d really enjoy it as well. Cottage cheese is really good for you and you can beat eggs for nutrition. This is packed with goodness and I’ll be trying these very soon.

  • Wow, that is amazing. I was expecting to see flour as the second ingredient, but I was not expecting a combination of ricotta cheese and eggs would create a flatbread. I have made naan bread with just two ingredients – natural yoghurt and self raising flour. I can’t wait to try this flatbread.

  • That’s insane! I can’t believe that you can get flat bread just from cheese! No flour or anything! I am a huge cheese lover too, so I bet this will taste amazing with some garlic and herbs. I am still reeling trying to wrap my head around this concept! It must be the eggs holding everything together, but still!

  • I’m going to try this today for lunch! It sounds too easy but looks good in the video. Hard to watch the video with her talking with her mouth full so watch it on mute. Gross. Things like this are such a good idea when you don’t know what to have or need to use up items.

  • Cottage cheese. I’ve never been into it but as a vegetarian, I should be! This seems easy and yummy… and amazing if you’re gluten free. Although surely you can add flour to this as well? Next not 39 degree day, I’ll actually give this a try. Nothing to lose! New addiction to gain!

  • I dont like cottage cheese but it actually does blow my mind how simple this recipe is, needing only 2 ingredients to create something! That is seriously so amazing. Amazes me how people come up with these sorts of simple recipes that turn out great. Love it! Hopefully will see more

  • Gosh what a unique idea I never would have felt this would work. Such a shame eggs are so hard to come by at the moment though! I have some cookies but even they aren’t paying their egg rent lately. I will definitely give this a go when I have some extra eggs to spare

  • No way! this looks amazing!! so easy! the combinations for toppings are endless! I will be giving this a red hot try. What a great recipe to pull out for a quick impressive home made lunch. I don’t eat a lot of cottage cheese (can remember the last time that I did….have I ever?) so I am interested to give this a try.
